Korean Sushi Bowl

How to make the easiest Korean Sushi Bowl EVER.

One of the most trending dishes on the internet right now is probably the Korean sushi bowl, which is so nutritious and hella’ easy to make! It is so easy and does not disappoint at all. The best thing about it is that you can devour it hot or cold, making it perfect to use it as a meal prep. There is no wrong “way” to make it: it can be sweet or tangy, non veg, vegetarian, vegan or pescatarian – it is totally up to you. When you get ready to serve it, make sure you have a big enough bowl so all the good stuff doesn’t go flying!

These are the ingredients you need to make a basic sushi bowl:

  • sushi rice
  • salmon filet
  • sushi nori – seaweed
  • avocado
  • cooked beetroot
  • spring onion
  • cucumber
  • spicy sriracha mayo
  • mayo
  • lime
  • soy sauce
  • Rice vinegar + sugar

From here it is really easy, believe me. Start by washing 250g of your rice 2-3 times and soak it in water for at least 30minutes for best results. Add 330ml to the rice, bring it to a boil and let it simmer for 10minutes while it is covered on low heat. Then turn off the heat and let it cook for 20-25minutes, while it is still covered. After it is cooked, add your 1tbsp of rice vinegar with same amount of sugar. You can also replace it with 2tbsp of Mirin, which is sweet rice seasoning. (my housemate had it, so I stole some of his)

While your rice is cooking, let’s prep your salmon. Heat up some olive oil in a pan and place your salmon, skin side down. Sprinkle some salt, pepper and lime juice and let it cook. I would recommend cooking it on low heat so you have more control over it. Don’t forget to keep an eye on it!

Get your chopping board ready, as we are about to cut some veg! Slice your cucumber, cooked beetroot, avocado and chop as much spring onions as much as you want. Remember that this bowl is completely personalised to yourself, so go ahead and add what you love!

Let’s ensemble it! Like I said before, add a big enough bowl or container and add your rice. Top it up with your veg and add your salmon. Now add your sauces on top and voila! I like to mix it all up and have it with seaweed topped with kimchi! To get the full experience, use chopsticks. Unfortunately, I didn’t have any, so I used my hands!

This is perfect to take it to work, school or wherever you need a packed lunch for!
